Dining Services Shows You How to Make Apple-Maple Glazed Chicken and Chocolate Mousse

Warning. This apple-maple glazed chicken and chocolate mousse recipe will make you hungry. But don’t fret, Anselmians. We have a new how-to video featuring the talented Saint Anselm Dining staff showing you how to make the classic Davison Hall dish right in your own home. 

“It’s very much a student favorite,” said Rosemary Stackpole, the director of dining services, about their famous apple-maple glazed chicken. They serve it at Davison every three weeks and have been for about eight years, according to Stackpole. She often gets requests for the recipe from students who’ve graduated. 

It’s not overly difficult to prepare apple-maple glazed chicken, which has a sweet and tangy sauce with red pepper flakes for an added kick. Dining staff also paired this with a sumptuous chocolate mousse dessert.
